BRIEF
Founded in 2019, Lily and Cosmo Sterck opened Marmo, a restaurant and wine bar in the centre of Bristol. Having focused on creating a menu guided by seasonal and locally sourced ingredients, with a wine list showcasing European producers who farm organically or biodynamically, Lily and Cosmo, were keen to grow the the business and develop the skill sets of the team.
Salt was asked to review and analyse the business, to help achieve these goals.
